Default question about stock tune

I recently just bought this 2002 formula with 5.7 ls1. the car had loudmouth exh and k&n filter, both of which I removed for stock. Since doing that the car feels a lot slower. It could be my imagination because its not loud as sin like it was before OR I could just be used to it by now, But I don’t think so. I know that most bolt on mods advertise horsepower but is usually a bunch of BS. My question is, could the car have been tuned for those mods and my removing them leaving power on the table. I read somewhere once (for a vette anyway) that you can check for a custom tune by watching the temp at which the fans kick on. Anyone know if this is true for 4th gen F-body? Where locally can I get my whip checked/tuned back to stock?
